DESCRIPTION

Appearance
Purple red coloured wine with brown highlights, full bodied, clean and brilliant.

Aroma
Aromas of ripe black fruit, leather, countryside, alfalfa bale, subtle notes of vanilla, coffee and chocolate, resulting from the contact with Oak, great body.

Palate
Persistent aromas, unctuous aroma, typical astringency of a Cabernet, great body, finally appears a Syrah with its typical characteristics. Long finish.

Suggested Food Pairing
Big game animals meat (deer, boar, alligator) and small game (rabbit, partridge and pheasant).

Storage
5 years.

Grape variety: Composed of 50 % Cabernet Sauvignon 50% Syrah

Harvest: 2013
Region: Caucete San Juan de la Frontera
600/800 meters above sea level.
Production: 85 hl./ha.
Harvest: Manual in boxes de 10kg. each.
Alcoholic Fermentation: Prolonged, en stainless steel vats with
selected yeasts and strict control of temperature 25° to 28°C.
Malic Fermentation: 100 %
Oak: American oak tank during 8 months.
Maturing in Bottles: 12 months, under controlled temperature 16°C.
Alcohol: 13,5 % v/v.
Total acidity: 5,36
Temperature: 15º / 17º
